After recently holding the Cabin Fever “Ransack the Cellar” event which paid homage to Cabernet via a museum and vertical tasting of our single site Cabernet Sauvignon, we decided we need to share the love with all of you who couldn’t make it to the event.  We traced our roots back and explored the nuances that each vintage brings and the characteristics that this variety develops whilst cellaring.

We have put together a vertical tasting pack of Cabernet containing a trio of our finest. The nuances imparted due to our special vineyard site and each individual season are woven seamlessly into each bottle and can now be yours to enjoy.

With stock sourced from the Museum all the hard work has been done for you , so all that’s left to do is to taste away. The limited edition pack contains:

Description

Viticulture: The vineyard is grown naturally using organic biological principals. Employing seaweed and fish emulsion foliar fertilisers plus elemental sulphur and copper sprays for disease prevention. Nothing is wasted, grape must is composted, mulched and mixed with manures then returned to the vineyard floor. Cover crops of clover, peas and rye grass are grown between the vines which provide nitrogen and green mulch. Canopy management is vital, hedging and leaf plucking are used to control exposure to sunlight and further our effort to deliver perfectly ripe, balanced grapes to the winery.

Vinification: The grapes were picked in the cool of the morning, destemmed and placed in two open fermenters.  Inoculated with a neutral yeast and the cap plunged up to four times a day, by hand.  After 10 – 15 days the wine was kept on extended skins for a further ten days.  Then the wine was drained, and the must basket pressed off to tank where it underwent a malolactic fermentation which softens the acid.  The wine was then racked to a mix of one and two year old French barriques, then left to mature for 12 months

 

2013 Cabernet Sauvignon

Violets, blue currant fruits, chalky tannins, coffee grinds, powerful and rich. Great length and fruit weight. Warmer summer spike in vintage gives full fruit and chewy.

Harvest: 3rdh April 2013

Technical Data:   Alc. 14.5% pH 3.5   TA 5.8 g/l

Production: 560 dozen

Vintage:Margaret River had an excellent vintage for both red and whites with little disease pressure.  Winter/spring rainfall in the Margaret River was less than average, the biggest downpour of around 250mm in June. A significant weather event in late October/early November brought 100km winds and hail, which affected flowering, followed by more wild weather in early December, cumulatively resulting in significant crop losses (up to 40% down). January and February were hot and dry, then, March saw cooler conditions, which allows the tannins to ripen in sync with the fruit character.  The Marri blossom was abundant therefore bird damage was minimal although we did net the reds. VintageRating 9/10 

2014 Cabernet Sauvignon

Full blown dark fruits, concentrated cassis, blackberry, dark forest fruits, raspberry acid full mid palate, juicy and textural. Great length, is a big well aging powerful wine.

Technical Data:   Alc. 13.9% pH 3.62   TA 6.2 g/l

Production: 470 dozen

Vintage: The 2014 vintage represents the regions 8th successive year of favorable weather conditions across all varietals.  There was minimal rain fall in the summer period, less than the average of 4%.  The growing season was very typical of an excellent season, in terms of warm, sunny conditions with a mild ocean breeze, resulting in minimal disease pressure.  There was ample Marri blossom thus bird damage was kept to a minimum, however we still netted the vines.

2015 Cabernet Sauvignon

Tasted July 2002 by Dylan Arvidson, Winemaker
Lifted raspberry cassis, strawberry and cream, bay leaf and some subtle leaf notes, blue fruit spectrum, cassis and ripe raspberry, redskins and spice.

Harvest: 30th March 2015.

Technical Data:   Alc. 14.5% pH 3.52   TA 6.3 g/l

Production: 240 dozen

Vintage: Margaret River vineyards produced lower than expected grape yields across all varieties in vintage 2015. The cause can be traced back to adverse weather conditions that affected primordial bud formation, followed by a-typical cool and unsettled conditions in November and December 2014 which impacted flowering and fruit set.  Winter was warmer than usual.  Disease pressure was minimal, although birds such as Silver Eyes were a problem due to the delayed blossoming of marri flowers so the vineyard was netted. Once again the quality was exceptional in all varieties.
