Colour: Straw with a green hue.

Aroma: Apple shortcake and golden kiwifruit leap out of the glass. Hints of Anzac biscuits from time in bottle gives complexity to the fruit-rich aroma.

Palate: Crisp and refreshing come straight to mind as flavours of crunchy Pink Lady apples and lime zest come through, with touches of pineapple and mango. Acidity and minerality run through the wine, finishing dry and moreish.

Vinification: The grapes were hand-picked in the cool of the early morning to retain the delicate flavour profile. Whole bunch pressed then fermented in barrels with a mix of indigenous and freeze-dried yeast strains. Bi-weekly battonage on lees gives the wine depth and complexity. Bottled for second fermentation in June 2025 to ensure retention of the fresh fruit characteristics. Disgorged in January 2026, a small tirage of 3 g/L was added to balance acidity.

Vintage 2025: 9/10 Vintage 2025 was short, sharp and full of energy. Warm, dry days and cool nights delivered clean, beautifully balanced fruit, with whites and reds ripening almost simultaneously — a rare phenomenon in Margaret River. Chardonnay and Chenin Blanc were safely picked within two weeks, followed closely by Syrah, Shiraz and Malbec, including a moonlit harvest and sunrise foot stomp to kick off fermentation. With no disease pressure, excellent acidity and outstanding flavour across the board, this vintage is shaping up to be one of elegance, structure and vibrancy.
