Production – 49 dozen
Colour: Deep red with purple hues.
Nose:Raspberry lamingtons and underlying cardamom pods.
Palate: Swathes of fresh raspberries and red currents. Bright acidity and contoured tannins envelope the fruit giving a wine with delicate yet present structure. Judicial use of French oak adds a touch of vanillin biscuit notes on the finish.
Vinification: Picked with a Selectiv machine harvester in the early hours of the morning. The grapes are then tipped directly into open fermenters. The Selectiv machine removes all petioles, stems, jacks and other unwanted MOG. Being one of the Bordeaux varietals we felt it best to inoculate this wine with a Bordeaux yeast strain that promotes structure and tannin development. A small amount of enzyme was added to assist in colour extraction.Plunged 3 times daily until the Baume dropped to 0, we then covered the ferment and left if to macerate for a total of 30 days on skins. This helps build structure and also depth into the wine. Basket pressed direcly to French oak barrels, 1 x Brand new and 1 x one-year-old, and left to mature for 15 months before bottling unfined.
The Cabernet Franc was bottled in July 2020. Can be enjoyed now or will age gracefully.

2019 Vintage: 2019 was an unseasonably cool growing season. Great for elongating the ripening period of Chardonnays. Flavor development was optimal without over accumulation of sugars. 2019 shows fine elegant styled chardonnays with funky complexity. There was no Marri Flowers so netting of all varieties was necessary.
