Bouquet:Fresh Nashi pears and golden kiwifruit with hints of shortbread biscuits showing through.

Tasting Notes: Bursting with zesty Yuzu lemon and apple strudel flavors. Crisp and clean on the palate with persistent beading bubbles that are fine on the tongue. Finishes dry with lingering citrus and biscuit notes. Serve chilled as an aperitif to match with oysters, seafood and light cheeses.

Vinification: On 8th of March, the grapes were hand-picked in the cool of the early morning to retain the delicate flavour profile. Whole bunch pressed then fermented in barrels with a mix of indigenous and freeze dried yeast strains. Bi-weekly battonage on lees gives the wine depth and complexity. Bottled for second fermentation in June 2023 to ensure retention of the fresh fruit characteristics. Disgorged in January 2024, a small tirage of 3g/L was added to balance acidity. 

2023 Vintage Rating 9/10: Winter was cool and long here in Margret River with even a few frosts that are very rare. This helped with dormancy and pruning could be done in a timely manner. It stayed cool all the way through till the end of November pushing budbreak and flowering back up to 3 weeks on last year. By the end of November the weather was perfect without a drop of rain till 3rd of March. Warm but not hot conditions with temperatures around 30 degrees helped things catch up from the late spring. No Marri blossom has meant there were a lot of nets on and off protecting fruit from birds as it ripens. Yields were higher than the previous two vintages and the overall quality of fruit is exceptional.
