Colour: White gold.
Bouquet: Beautifully fragrant green apple and melon, there is a pleasant yeast/fresh bread aroma with touches of lemon spritz.
Tasting Notes: A fine and persistent bead with a pale lemon hue, the palate is dry and complex with touches of nougat, brioche and lemon meringue, balanced with a touch of citrus peel phenolic, well rounded and finishes with a beautiful lemon/lime acidity. Serve chilled as an aperitif to match with oysters, seafood and light cheeses.
Cellaring: Drink now or age for 3-5 years.
Harvest: The grapes were harvested 28th February 2018.
The grapes were hand-picked in the cool of the early morning to retain the delicate flavour profile. Whole bunch pressed then fermented in barrels with a mix of indigenous and freeze dried yeast strains. Bi-weekly battonage on lees gives the wine depth and complexity. Bottled for second fermentation in June 2018 to ensure retention of the fresh fruit characteristics. Disgorged in January 2019, a small tirage of 3g/L was added to balance acidity.

Flowering and fruit set in October and November indicated fantastic yields and our loamy soils benefited from rains in December which promoted excellent growth and lush canopies. January and February were cool without the 40°C heat spikes and this assisted steady ripening, producing bright white acids, aromatics and good flavours. The slower ripening has resulted in superb whites with excellent flavour profiles and natural acidity. An outstanding white vintage with good yields. The reds also benefited from the cooler ripening with better colour development and riper, softer tannins.
