Same wine, new name, new vintage. Previously known as our Cab Mac Syrah, our 2025 Syrah is made in the same playful style using whole-bunch carbonic maceration, creating a bright, juicy red that’s all about vibrant fruit and freshness.
A small run of this delightful project wine.
Colour: Deep crimson with purple hues.
Bouquet: Confectionery in a glass, with lifted raspberry cordial and boysenberry jam from the carbonic maceration process.
Palate: Juicy and fruit-driven, with berry coulis and redskins aplenty. Young and vivacious, this wine is built around generous fruit, with soft tannins and crisp, bright acidity. Serve lightly chilled for the perfect summer red.
Winemaker’s Note: Carbonic maceration is all about creating bright, aromatic and fruit-driven wines. Whole bunches of grapes are placed into vats, which are then sealed and filled with carbon dioxide to create an oxygen-free environment. During this process, fermentation begins inside the intact berries, producing the distinctive raspberry, strawberry and confectionery characters associated with the style. It also extracts relatively little tannin, resulting in a softer, juicier red designed to be enjoyed young – and particularly delicious served lightly chilled.
Vinification: Hand harvested by our winemaker, one tonne of whole Syrah bunches was gently placed into a sealed vessel, keeping the berries intact. Carbon dioxide was used to remove the oxygen before the fruit was sealed away for two weeks of carbonic maceration. After this initial fermentation inside the berries, the grapes were destemmed and fermentation continued in the traditional manner. The wine was then basket pressed into seasoned barrels and matured for six months before being bottled young and fresh.
Vintage 2025: 9/10 V25 was short, sharp and full of energy. Warm, dry days and cool nights delivered clean, beautifully balanced fruit, with whites and reds ripening almost simultaneously — a rare phenomenon in Margaret River. Chardonnay and Chenin Blanc were safely picked within two weeks, followed closely by Syrah, Shiraz and Malbec, including a moonlit harvest and sunrise foot stomp to kick off fermentation. With no disease pressure, excellent acidity and outstanding flavour across the board, this vintage is shaping up to be one of elegance, structure and vibrancy.
