Colour: Deep Garnet
Aroma: Bright and lifted with berry coulis and red currents. Some hints of earthy leaf litter and cedar.
Palate: Beautifully poised with all the hallmarks of great Cabernet Franc! Raspberries and brambly berry fruits work alongside savoury aspects of thyme and bay leaf. Elegantly weighted with silky fine smooth tannins. Balanced and long. A wine that will develop gracefully for years to come.
Viticulture: The vineyard is grown naturally using organic biological principals. Employing seaweed and fish emulsion foliar fertilisers plus elemental sulphur and copper sprays for disease prevention. Nothing is wasted, grape must is composted, mulched and mixed with manures then returned to the vineyard floor. Cover crops of clover, peas and rye grass are grown between the vines which provide nitrogen and green mulch. Canopy management is vital, hedging and leaf plucking are used to control exposure to sunlight and further our effort to deliver perfectly ripe, balanced grapes to the winery.
Vintage 2022 9/10: After coming off a very wet winter above average for the first time in many years this pushed the bud break back around 10 days. Spring sprung and a few more rain falls kept soil moisture levels high and diligent timely spraying of organic fungicides were necessary. Summer came in Hot especially over Christmas and New Year with 3 days over 40c unheard of in Margaret River. The vines were freshened with irrigation and flowering and fruit set was about average. Ripening conditions were perfect allowing grapes to develop lovely flavours and intensity. A great Marri flowering kept the grapes free from birds, however vines were still netted. Harvesting was done in bright sunshine and dry conditions an absolute magic vintage.
Vinification: The grapes were picked in the cool of the morning on 30th March 2021, 50% destemmed and placed in open fermenters. The rest was put as whole bunches into a fermenter and fermented separately. Innoculated with a neutral yeast and the cap plunged up to four times a day, by hand. After 10 days the wine was kept on extended skins for a further ten days. Then the wine was drained and the must basket pressed off to tank where it underwent a malolactic fermentation which softens the acid. The wine was then racked to a mix of one and two year old French barriques, then left to mature for 12 months. Blended and put to bottle in July 2023.
