An elegant and beautifully structured Margaret River Cabernet Sauvignon, showing lifted dark fruits, cedar, thyme and savoury complexity. Produced from a remarkably small crop and harvested just ahead of Cyclone Seroja, the 2021 vintage offers exceptional finesse, fine tannins and impressive length. Matured in French oak and aged in bottle for three years before release, this is a wine with plenty of character today and the structure to reward further cellaring.

Colour: Garnet.

Aroma: Beautifully lifted with blackcurrant, cedar and polished oak. Earthy and brooding, gradually revealing dark plum, dried herbs and hints of thyme. An evolving bouquet with all the hallmarks of classic Margaret River Cabernet Sauvignon.

Palate: Elegant and finely structured, with blackberry, red and blackcurrant complemented by savoury nori and umami characters. Fine, persistent tannins provide purity and length, with lingering notes of liquorice, thyme and cedar. A wine of finesse and intensity, with the potential to develop beautifully over the next 10–15 years.

Awards & Reviews “Medium-deep garnet colour with a savoury bouquet of creosote, soy sauce, tapenade. Gently leafy. The wine is mellow and starting to show maturity, the tannins abundant but fine and supple. Earth and dried herbs on the finish.” 91 Points — Huon Hooke, The Real Review

Winemaking Following a cool and challenging growing season, the Cabernet Sauvignon was harvested on 10 April 2021, just one day before the remnants of Cyclone Seroja brought 30mm of rain to the vineyard. Yields were exceptionally low at just 2.7 tonnes per hectare, but the fruit was beautifully ripe and in pristine condition.

The grapes were open fermented and hand plunged over 16 days on skins before being gently basket pressed. The wine spent an initial six months in French oak before undergoing a rack and return, allowing the barrels to be cleaned before the wine was returned for a further 12 months of maturation.

Just ten barrels were produced, all of which contributed to the final blend, with 60% new fine-grained French oak. Bottled on 14 November 2022, the wine was then aged for three years before release.

The result is a classically styled Margaret River Cabernet Sauvignon, combining intensity, elegance and excellent cellaring potential.

Vintage 2021 | 8/10 Following an exceptionally dry winter in 2020, budburst arrived early across all varieties. A wetter-than-average spring brought significant disease pressure, requiring careful vineyard management and timely applications of organic sprays through to December.

Fortunately, warmer and sunnier conditions arrived at just the right time, encouraging ripening across an already reduced crop. With significant rainfall events approaching harvest, careful canopy management and naturally low yields proved invaluable in achieving optimal ripeness and healthy fruit.

Late marri blossom also meant vineyard netting was essential to protect the crop from birds. Despite the challenges, the season produced pristine fruit with excellent flavour concentration and balance.
