Colour: Garnet

Aroma: Beautifully lifted with currents, cedar and wood polish. Earthy, brooding and ever evolving into dark plum and hints of thyme. An age worthy wine showing all the hallmarks of a classic Margaret River Cabernet.

Palate: Elegance and finesse sum this wine up with Blackberry, red and black currents enveloped in savoury nori umami characters. Fine and present tannins give a line of purity and length with lingering flavours of liquorice, thyme and cedar. A delicious wine that will grow and develop over the next 10 to 15 years.

Vinification: After a cool season in the vineyard the grapes were harvested on the 10th of April the day before the remanence of cyclone Seroja dumped 30mm of rain on the vineyard. A tiny crop of 2.7 ton per hectare was well ripened and in perfect condition at harvest.

The fruit was open fermented, hand plunged for a total of 16 days on skins before being basket pressed. The wine was matured for 6 months in oak before being “Rack & Returned” where the wine is pumped out of oak the barrels are cleaned and the wine returned. It was then left to mature all precious 10 barrels worth for a further 12 months. All barrels made the blend comprising of 60% new fine grained French oak. Bottling was 14th November 2022 and the wine was bottle aged for 3 years before release. A beautiful elegantly styled Margaret River Cabernet with intensity and longevity.

Vintage 2021 Rating 8/10: After a very dry 2020 winter bud break was early for all varieties. Spring was wetter than average so protection from disease was critical with timely applications of organic sprays when the weather permitted all the way to December. Finally the sun came out at the right time to accelerate ripening of the lower than normal crop load. This was a blessing as harvest approached significant rain events occurred. Hard work in the vineyard opening the canopy for air flow and small crops got all varieties to optimum ripeness with pristine fruit. Marri Blossom was late and netting was required to stop bird damage.
