Harvest: At optimum flavour ripeness the cane is cut at the base of the shoot, allowing the bunches to dry out.  This concentrates the sugars and flavours in the berries resulting in a luscious dessert wine.  The canes were cut on February 22nd and grapes were handpicked four weeks later on March 15th.

Vinification:  The grapes were pressed in a pneumatic press, fermented in a stainless tank and matured for five months in old French oak, then bottled in December 2015. Enjoy now or cellar 5 to 8 years if you have the resolve.

Technical Data: Alc. 8%           Residual Sugar  142 g/L

Vintage: Margaret River vineyards produced lower than expected grape yields across all varieties in vintage 2015. The cause can be traced back to adverse weather conditions that affected primordial bud formation, followed by a-typical cool and unsettled conditions in November and December 2014 which impacted flowering and fruit set. Winter was warmer than usual. Disease pressure was minimal, although birds such as Silver Eyes were a problem due to the delayed blossoming of marri flowers so the vineyard was netted. Once again the quality was exceptional.
