Production: 72 dozen
Colour:Deep Crimson with purple hue.
Bouquet:Black cherry with leather and chocolate.
Palate:Lots of sweet ripe fruit from optimally ripe grapes. Syrupy blackcurrant and luscious ripe plums. Balanced acidity and firm but fine tannins balances the intenseness of the fruit.
Harvest: 4rd April 2019
Vinification: The grapes were picked in the cool of the morning, destemmed and placed in two open fermenters. Innoculated with a neutral yeast and the cap plunged up to four times a day, by hand. After 10 days the wine was kept on extended skins for a further ten days. Then the wine was drained and the must basket pressed off to tank where it underwent a malolactic fermentation which softens the acid. The wine was then racked to a mix of one and two year old French barriques, then left to mature for 10 months. Blended and put to bottle in July 2020.
Technical Data: Alc. 14.0% pH 3.5 TA 6.1 g/l
2019 Vintage: The 2019 vintage started about 2 weeks later than the previous few years and had been cool, very different to the rest of the country. Yields have been lower. Lovely white wines have had time to develop delicateflavourswhile retaining natural acidity. A bit of mid-vintage rain refreshed the reds, then the fruit hung out there allowing for a long, slow ripening period. There was no Marri flowers so netting of all varieties was necessary.
