Colour: Straw gold

Bouquet: Jumps out of the glass with Funk.  Flint stone, aged cheddar cheese and chamomile tea. Hints of preserved citrus and lime zest.

Palate: Zesty citrus based fruits with mandarin and lemonade flavours. Complex funky notes of cheese rind and marzipan. Creamy butter and toasted almonds from careful use of oak. Fine boned saline acidity running through the entire palate giving a cleansing freshness to the finish. Salivating.

Cellaring: Drink now or cellar until 2027

“Wild ferment in barrel, regular bâtonnage. If you’ve ever picked a curry leaf fresh from the plant, and crushed it between your fingers, then you know what this wine smells like. Add yellow peach, brine and red apples, and you’re there. The flavours on the palate fall in line perfectly with the nose. All things in place. Spicy, exotic, rich, balanced … everything laced up by saline acidity.”
