Colour: Deep Inky Purple
Bouquet: Boysenberry jam, blackberry pie, black strap liquorice and hints of vanilla bean.
Palate: Fresh blueberry and boysenberry fruits, milk chocolate liquorice bullets with some tarry elements. Underlying cedar and toastyness from fine grained French oak. A delicately weighted soft tannin structure giving a wine with elegance and poise. For immediate enjoyment or cellar up to 2027.
Vinification: The grapes were picked in the cool of the morning on 25thMarch 2019, 50% destemmed and placed in open fermenters. The rest was put as whole bunches into a fermenter and fermented separately. Innoculated with a neutral yeast and the cap plunged up to four times a day, by hand. After 10 days the wine was kept on extended skins for a further ten days. Then the wine was drained and the must basket pressed off to tank where it underwent a malolactic fermentation which softens the acid. The wine was then racked to a mix of one and two year old French barriques, then left to mature for 12 months. Blended and put to bottle in July 2020.

2019 Vintage: 2019 was an unseasonably cool growing season. Great for elongating the ripening period of Chardonnays. Flavor development was optimal without over accumulation of sugars. 2019 shows fine elegant styled chardonnays with funky complexity. There was no Marri Flowers so netting of all varieties was necessary.
