Colour: Deep Ruby Red
Bouquet: Lifted aromas of plums and ripe currents with a touch of choc mint in the background.
Palate: A stunning vintage showing ripe sweet fruits of black currents, dark plums and black forest gateaux enveloped by earthen notes of cedar and fresh leather. Structured ever present fine tannins give length, weight and longevity to this wine. A classic wine from a classic vintage.
Harvest: Grapes were harvested on 22nd March.
Viticulture: The vineyard is grown naturally using organic biological principals. Employing seaweed and fish emulsion foliar fertilisers plus elemental sulphur and copper sprays for disease prevention. Nothing is wasted, grape must is composted, mulched and mixed with manures then returned to the vineyard floor. Cover crops of clover, peas and rye grass are grown between the vines which provide nitrogen and green mulch. Canopy management is vital, hedging and leaf plucking are used to control exposure to sunlight and further our effort to deliver perfectly ripe, balanced grapes to the winery.
Vinification:Pristine Cabernet Sauvignon fruit was picked in the cool of the morning. It was then placed in open fermenters and macerated on skins for 24 days. The cap was lovingly hand plunged four times a day in the early stages of the ferment, to extract colour and tannin. The free run juice was drained and the fermented grapes were basket pressed to tank. The wine under-went a malolactic fermentation which softens the acid. The wine was then racked to French barriques, (50% new and 50% one and two year old) and matured for 16 months. Blended and bottled in December 2019.

2018 Vintage: Flowering and fruit set in October and November indicated fantastic yields and our loamy soils benefited from rains in December which promoted excellent growth and lush canopies. January and February were cool without the 40°C heat spikes and this assisted steady ripening, producing bright white acids, aromatics and good flavours. The slower ripening has resulted in superb whites with excellent flavour profiles and natural acidity. An outstanding white vintage with good yields. The reds also benefited from the cooler ripening with better colour development and riper, softer tannins.

“2018 was a perfect vintage in Margaret River, and produced wines of ripeness, balance and power. Pungent intensity of blackberry/cassis flavour, and streamlined length though the finish. It extends like a bicep, flexing its regional pedigree and showing the bounty of the vintage. If there was a quibble, it would be the metallic edge to the tannins through the finish, however this is absorbed by the fruit, so it remains minor in the scheme of things.”
