Colour: Deep ruby red with brick red hues.
Bouquet: Dark, ripe forest fruits with cedar wood spice and herbaceous high notes.
Palate: Red berry acidity, velvet tannins, plush mouthfeel, black currant with density and length, great structure that will reward mid to long term cellaring
Harvest: Grapes were harvested on 18th April 2017.
Viticulture: The vineyard is grown naturally using organic biological principals. Employing seaweed and fish emulsion foliar fertilisers plus elemental sulphur and copper sprays for disease prevention. Nothing is wasted, grape must is composted, mulched and mixed with manures then returned to the vineyard floor. Cover crops of clover, peas and rye grass are grown between the vines which provide nitrogen and green mulch. Canopy management is vital, hedging and leaf plucking are used to control exposure to sunlight and further our effort to deliver perfectly ripe, balanced grapes to the winery.
Vinification: Pristine Cabernet Sauvignon fruit was picked in the cool of the morning. It was then placed in open fermenters and macerated on skins for 24 days. The cap was lovingly hand plunged four times a day in the early stages of the ferment, to extract colour and tannin. The free run juice was drained and the fermented grapes were basket pressed to tank. The wine under-went a malolactic fermentation which softens the acid. The wine was then racked to French barriques, (50% new and 50% one and two year old) and matured for 16 months. Blended and bottled in December 2018.

2017 Vintage: The spring of 2016 was much cooler and wetter and this combined with the cooler conditions in early 2017 have seen Vintage 2017 be a more traditional vintage. Most white varieties yields were strong and harvest began later in February and well into March capturing the bright, aromatic aromas. The slower ripening has resulted in superb whites with excellent flavour profiles.
