Colour: Deep ruby with red brick hues.
Nose: Savoury plums, spice and coffee characters with white pepper and subtle cedar oak notes.
Palate: Cellaring has developed the red berry characters and intertwined them with the perfumed cedary oak and a hint of cinnamon. The sinewy tannins have aged gracefully and provide support to the soft mouth filling finish.
Vinification: The grapes were destemmed and placed in two open fermenters. Innoculated with selected rhone style yeast and the cap plunged up to four times a day, by hand. After 10 days the wine was drained and the must basket pressed off to barrel where it underwent a malolactic fermentation which softens the acid. The wine was then racked and returned to a mix of 50% new and 50% one and two year old French barriques, then left to mature for 12 months. Blended and bottled in August 2008.
Technical Data: Alc. 13.5 % pH 3.54 TA 5.3g/L
2007 Vintage: The 2007 vintage was excellent for both reds and whites. There was minimal summer rain and vintage was early with everything ripening at once, giving Robert a headache. With ample Marri blossom there was minimal bird damage.
2007 Red Vintage Rating 9/10
