Museum Stock

Colour: Brilliant golden straw.

Bouquet: A bouquet of brioche, nougat, jasmine and ripe nectarines.

Palate: The palate is delicate, yet mouth filling, with developed ripe white stone fruits intermingled with grapefruit, a flinty minerality and crisp lemon like acidity, finishing with a touch of brulee.

Harvest: The grapes were picked on March 2nd 2005.  Yield was 2.5 Tonne per acre.

Vinification:

The grapes were harvested in the cool early morning hours, then immediately pneumatically pressed. The juice was cold settled and transferred to tank for the primary ferment. Using a commercial yeast culture the juice was inoculated; once started the ‘new wine’ was racked to new and old French to ferment in barrel with lees stirring once a week. A partial malolactic ferment was introduced.

This year the oak comes from three different coopers, three different forest and three different years.  The wine was initially stirred once a week on the lees, given partial malolactic fermentation and left to mature in barrel for twelve months.

Bottled:February 2006 sealed with a screw cap. 

Technical Data: Alc. 14.5%      pH 3.44       TA 6.2g/l

Vintage:
The dry and cool growing season produced fruit with very good natural acidity, good colour and flavour especially for the Chardonnay.  The abundance of Marri Blossom kept bird damaged fruit to a minimum.  The Chardonnay was harvested at the beginning of March.  At the end of the month there was an unusual burst of rain with a total rainfall of 75mm.Once again the quality was exceptional in Chardonnay
