Cabernet Sauvignon

2007 Tasting Notes

Cape Grace’s flagship wine! Spicy blackcurrant and cassis aromas, with fine grained tannins show the class of this Margaret River Cabernet Sauvignon. Basket pressed and hand plunged to enhance the classic Wilyabrup character. Expressive fruit is supported by good structure, fine texture and subtle complexity. Matured in French barriques for 12 months and aged in the bottle for another 12 months, providing 5 to 8 years cellaring potential or immediate enjoyment.

"Clearly one of the best cabernets yet released from Cape Grace who has an impressive track record with this variety.  It’s classically structured with concentrated blackcurrant, tobacco leaf and black olive characters.  The sinewy ripe tannins support an impressively powerful and sustained palate.  Excellent oak integration and well balanced. A most stylish wine.” Ray Jordan

"A very fragrant cabernet showing obvious cassis aromas and a subtle charry overtone. The palate is long and vibrant and the tannins firm and fine. Very much the classic cabernet style." Winewise
